Want to add a little extra flavour to your roasts? Well, we’ve got your next four roast rubs covered! For these recipes, all you need to do is mix the ingredients, rub them evenly over the meat and then let the flavours infuse for at least 2 hours (by wrapping the meat in plastic and then placing it in the fridge).
When you’re ready to start roasting, take the meat out of the fridge and let it return to room temperature before you start cooking. As the ingredient amounts are general, only use as much as you see fit (you can always store the leftover rub in a container and save it for next time). Enjoy!
Dried Herb Mix
- 2 teaspoons crushed dried tarragon
- 1 tablespoon crushed dried thyme
- 3 teaspoons crushed dried chives
- 1 teaspoon cracked pepper
- 1 teaspoon sea salt
Mustard and Co
- ¼ teaspoon dry mustard
- 1 teaspoon dried oregano
- ½ teaspoon dried rosemary, crushed
- 1 teaspoon dried thyme
- ¼ teaspoon coarsely ground black pepper
Spicy Paprika
- 2 teaspoons onion powder
- 2 teaspoons salt
- 1 teaspoon dried garlic
- 1 teaspoon cayenne pepper
- 2 tablespoons paprika
Sweet ‘n’ Salty
- ¼ cup granulated honey or raw sugar
- 1 tablespoon dried garlic
- 1 tablespoon onion powder
- ½ cup kosher salt (or coarse sea salt)
- ½ cup cracked black pepper
